Breads & Muffins
Oat bran, quick and
old fashioned rolled oats, crushed oats, and steel
cut can all be used as bread and muffin ingredients.
Oat products are used both as an ingredient in the
mix itself, or as a topping. Since oats do not
contain any gluten, they can not be used as the
primary ingredient in a mix. Wheat flour must be
present in order to have the dough rise. Again, the
important factors in oat product selection are
similar to those for cookies.
