Crackers containing oats generally have crushed oats or steel cut as an ingredient, but oat flour may also be used. Oats are usually included as an ingredient for texture and appearance purposes. The most important factor when choosing an oat product for this purpose is granulation. Shelf-life characteristics are again important, as is oat flavor.
Some of the newer
extruded snack foods contain oat flour, where the
same variables as in extruded breakfast cereals are
important.
