Meat Extenders
Oat products have been
used for some time as meat extenders. Oat bran was
used successfully until the oat bran craze made it
uneconomical. Quick and baby rolled oats are
currently used. Texture of the final product is the
most important factor when choosing a meat extender.
Meat flavorings can all be carried in the fats used
in the formulation, and they are strong enough to
mask oat flavors.
