High Nutrition, Low Cost
The principal criteria for all protein grain products processed by NAMA members are high nutrition, low cost, palatability, versatility in use, ease of preparation and good storability. Foods with these qualities are finding worldwide acceptance in an era when population is rapidly increasing and concerted efforts are being made to maintain an adequate food supply at an acceptable nutritional level.
A healthy, well-balanced diet requires a combination of protein, carbohydrates, fats, vitamins and minerals. Because protein is so important for growth and maintenance of health, the lack of it has been a major concern in feeding programs around the world. A complete protein contains the proper quantity and quality of the eight essential amino acids necessary for the growth and functioning of a healthy body. While the animal proteins - meat, fish, milk, eggs - provide the most complete balance of protein, high cost and limited supply preclude their use in many areas of the world.
Bulgur wheat and corn meal, the first high nutrition cereal grain products processed by NAMA members, have a protein content ranging from 8-14%. However, the quality of cereal protein does not match that of animal protein, primarily because it is deficient in one or more of the essential amino acids.
Research has shown that the several deficient amino acids could be added by blending or fortifying a cereal grain with the proper oilseed containing the necessary amino acids. Thus, products such as Soy Fortified Bulgur, Soy Fortified Corn Meal, and Wheat Soy Blend were developed to provide blended foods with a protein content ranging from 13-20% and approximating the nutritional quality of animal proteins.
